Description

Cream powder is a dairy product obtained by spray-drying fresh cream with a high milk fat content. It typically contains a minimum of 42% milk fat and low moisture (≤ 5%). Cream powder delivers the rich taste and texture of fresh cream in a convenient, shelf-stable form. It is widely used in bakery, confectionery, ice cream, sauces, dairy-based beverages, and ready-to-eat products. The product can be reconstituted with water to make cream or added directly to formulations for flavor and texture enhancement.

Purpose of Testing

  1. To ensure compositional compliance

    • Milk fat ≥ 42%

    • Moisture ≤ 5%

    • Appropriate levels of protein, lactose, and total solids

  2. To verify solubility and reconstitution

    • Evaluation of dispersibility, emulsification, and reconstitution quality when mixed with water

  3. To detect adulteration

    • Check for presence of non-dairy fats, starch, synthetic milk solids, or emulsifiers not declared on the label

  4. To ensure microbiological safety

    • Absence of pathogens such as E. coli, Salmonella, Listeria, and control of total plate count, coliforms, and yeast & mold

  5. To test for chemical contaminants

    • Screening for pesticide residues, heavy metals (e.g., lead, arsenic), antibiotic residues, and aflatoxins

  6. To evaluate physicochemical properties

    • Acidity, peroxide value, bulk density, scorched particles, and sensory characteristics (color, flavor, odor)

  7. To verify labeling and nutritional claims

    • Confirmation of fat content, ingredients, allergen declarations, and usage instructions

  8. To conduct shelf-life and packaging integrity testing
