Skimmed milk contains less than 0.5% fat and a minimum of 8.7% solids-not-fat (SNF). It is ideal for individuals seeking the benefits of dairy without added fat or calories. The UHT process involves rapidly heating the milk to at least 135°C for a few seconds, eliminating harmful microorganisms and extending the shelf life to 6–9 months without refrigeration (until opened).
