Description
Medium Fat Ice Cream and its variants—such as Kulfi, Chocolate Ice Cream, and Softy Ice Cream—are frozen dairy desserts regulated by the Food Safety and Standards Authority of India (FSSAI). These products are prepared from a pasteurized mix of milk or milk solids, sweeteners, and permitted additives, with the defining feature being a milk fat content between 2.5% and 10%, which places them between standard ice creams and low-fat or frozen desserts. They cater to consumers seeking indulgent flavours and creamy textures with a relatively lighter fat profile.
These frozen products may include various flavours and forms. Kulfi is a slow-frozen, dense dessert often flavoured with saffron, cardamom, or pistachio. Chocolate Ice Cream includes FSSAI-permitted cocoa or chocolate, while Softy Ice Cream is a soft-serve version, dispensed directly from a machine with a smooth, airy texture. Despite the lower fat content, medium fat ice creams must still contain at least 3.5% milk protein and not less than 30% total solids, ensuring a nutritionally rich product.
Only FSSAI-approved ingredients such as stabilizers, emulsifiers, colours, and flavours may be used within regulated limits. If any non-dairy fat is included, the product must be declared as a “frozen dessert” instead of “ice cream” as per labeling norms.
Labeling for Medium Fat Ice Cream must clearly state the product name (e.g., “Medium Fat Chocolate Ice Cream”), milk fat percentage, protein content, ingredient list, FSSAI license number, manufacturing and expiry dates, and appropriate storage instructions. These products are stored at or below –18°C to maintain quality and safety.
