Description
Medium Fat Frozen Dessert or Frozen Confection is a sweet, frozen product made using a blend of milk solids, edible vegetable oils or fats, permitted sweeteners, stabilizers, and flavouring agents. It is regulated by the Food Safety and Standards Authority of India (FSSAI) and is distinct from traditional ice cream because it includes non-dairy fat sources such as palm kernel oil or hydrogenated vegetable fats.
This dessert is formulated to offer a creamy and indulgent experience similar to ice cream but with a moderate fat content, making it a suitable option for consumers who prefer lighter alternatives. The use of vegetable fats helps extend shelf life, improve affordability, and maintain desirable texture and taste.
As per FSSAI standards, Medium Fat Frozen Dessert must contain more than 2.5% but less than 10% total fat, including any edible vegetable fat used. It must also contain not less than 3.5% milk protein and a minimum of 30% total solids. These products can be flavoured with natural or artificial flavours and may include additions like chocolate, fruits, dry fruits, or nuts. They are widely available in various formats such as cones, cups, bars, soft serve, and family tubs.
Labeling for such products must clearly mention “Medium Fat Frozen Dessert” or “Medium Fat Frozen Confection” and specify the use of edible vegetable oil or fat. It must also provide details such as milk protein and fat content, FSSAI license number, manufacturing and expiry dates, full ingredient list, and storage instructions—typically recommended at –18°C or below.
