Description
Gouda is a semi-hard to hard, ripened cheese made from pasteurized cow’s milk, known for its rich, buttery flavor and smooth, firm texture that becomes more complex with age. As per FSSAI standards, Gouda must meet specific compositional requirements, including a defined minimum milk fat content on a dry matter basis and regulated moisture levels to maintain its characteristic quality and taste. The cheese may contain a few small, round holes (eyes) and is typically formed into flat wheels or blocks. It is often coated in a protective layer of paraffin wax or plastic to support the aging process and preserve hygiene. Gouda is ripened over weeks to months, during which its flavor develops from mild and creamy in younger varieties to stronger and more caramel-like in aged versions. It must be free from added starches, non-dairy fats, and unauthorized substances. The product must comply with FSSAI’s microbiological standards and food safety norms, ensuring it is safe for direct consumption.
