As per FSSAI standards, Gouda must meet specific compositional requirements, including a defined minimum milk fat content on a dry matter basis and regulated moisture levels to maintain its characteristic quality and taste. The cheese may contain a few small, round holes (eyes) and is typically formed into flat wheels or blocks. It is often coated in a protective layer of paraffin wax or plastic to support the aging process and preserve hygiene. Gouda is ripened over weeks to months, during which its flavor develops from mild and creamy in younger varieties to stronger and more caramel-like in aged versions.
