Description
Edam is a semi-hard, ripened cheese made from pasteurized cow’s milk, recognized for its smooth, firm texture and mildly nutty, slightly salty flavor. As per FSSAI standards, Edam must meet specific compositional criteria, including minimum milk fat content on a dry matter basis and regulated moisture levels to ensure consistency in quality and taste. Traditionally shaped into spheres or blocks, Edam is often coated in red or yellow paraffin wax to aid in ripening and prevent contamination. The cheese may exhibit small, evenly distributed eyes and is aged to develop its signature mildness, making it suitable for slicing, grating, or culinary applications. It must be free from starches, non-dairy fats, and any non-permitted additives, and should comply with FSSAI’s microbiological safety and hygiene regulations. Edam must be stored under refrigerated conditions and packaged hygienically to preserve its integrity and safety for direct consumption.
