Description
Chhana-based desserts are traditional Indian sweets made primarily from chhana (curdled milk solids), which serve as the foundational dairy ingredient. As per the Food Safety and Standards Authority of India (FSSAI), these desserts include popular items such as Rasgulla, Rasmalai, Chamcham, Sandesh, and others. They are prepared by kneading fresh chhana, shaping it into desired forms, and cooking or soaking it in sugar syrup, milk-based solutions, or flavored bases.
FSSAI regulations specify quality parameters for the chhana used, ensuring it is derived from clean, wholesome milk and processed under hygienic conditions. The moisture content, fat percentage, and microbial load of both chhana and the final dessert are regulated to guarantee safety and consistency. The use of permitted food additives, colorants, and flavoring agents must comply with limits defined in the Food Safety and Standards (Food Products Standards and Food Additives) Regulations.
